Ingredients:
(Serve 4)
Carrots, 500g
Unsalted Butter, 50g
Maple Syrup, 50g
Sea Salt, Pinch
Black Pepper, Pinch
Chili Flakes, Pinch
Garlic Powder, Pinch
Onion Powder, Pinch
Dried Rosemary, Pinch
Pecans Coarsely Chopped, A Handful
Equipment:
Oven
Sauce Pot
Directions:
Wash the carrots thoroughly.
Set them aside on a baking tray.
Preheat oven to 200 degrees celsius or 400 fahrenheit.
In a sauce pot over medium heat, add butter and maple syrup.
Once the butter has melted, add salt, pepper, chili, garlic, onion and rosemary.
Stir until well combined.
Cook until it becomes bubbly.
Pour over the carrots and mix to coat well.
Wack into the oven and bake for 20 to 25 mins, flipping half way thru'.
Sprinkle pecans over the top and continue baking for another 5 mins or until the carrots are fork tender.
Taste and adjust for seasonings.
Serve immediately.
Transfer the carrots onto a serving plate, deglaze the baking tray with a splash of hot water, and drizzle over the carrots.
