Maple Glazed Carrots

Carrots and maple syrup are a pairing I never thought I’d love so much until I made this dish. Carrots have been a kitchen staple for centuries, often taking the backseat as a simple side, but when glazed with maple syrup and roasted to caramelized perfection, they truly shine.

The touch of chili and rosemary adds just enough warmth and herbaceous depth to keep things interesting. And let’s not forget the crunch of pecans—they’re the finishing touch that takes this dish from everyday to memorable.



I like to think of these maple-glazed carrots as the perfect meeting of tradition and creativity. Root vegetables have always had a place on the holiday table, and this recipe keeps that spirit alive while bringing something fresh to the mix.



It’s the kind of dish that’s straightforward enough to whip up for dinner but festive enough to stand tall next to a turkey on Thanksgiving.

Ingredients:

(Serve 4)

  • Carrots, 500g

  • Unsalted Butter, 50g

  • Maple Syrup, 50g

  • Sea Salt, Pinch

  • Black Pepper, Pinch

  • Chili Flakes, Pinch

  • Garlic Powder, Pinch

  • Onion Powder, Pinch

  • Dried Rosemary, Pinch

  • Pecans Coarsely Chopped, A Handful

 

Equipment:

  • Oven

  • Sauce Pot

 

Directions:

  1. Wash the carrots thoroughly.

  2. Set them aside on a baking tray.

  3. Preheat oven to 200 degrees celsius or 400 fahrenheit.

  4. In a sauce pot over medium heat, add butter and maple syrup.

  5. Once the butter has melted, add salt, pepper, chili, garlic, onion and rosemary.

  6. Stir until well combined.

  7. Cook until it becomes bubbly.

  8. Pour over the carrots and mix to coat well.

  9. Wack into the oven and bake for 20 to 25 mins, flipping half way thru'.

  10. Sprinkle pecans over the top and continue baking for another 5 mins or until the carrots are fork tender.

  11. Taste and adjust for seasonings.

  12. Serve immediately.

  13. Transfer the carrots onto a serving plate, deglaze the baking tray with a splash of hot water, and drizzle over the carrots.
